Here is a list of all the different Pokémon you can take photos of to get extra points:
 
Pikachu:
In the Tunnel, start taking Pikachu's picture as soon as you see it at the start of the course. With each picture, it'll move further down. Eventually it'll jump on an Electrode and start rolling. Take a picture of it rolling on the Electrode.

At the end of the River course, there will be a Pikachu sitting on top of a log. Throw an Apple or Pester Ball at it, and if you hit it, it will start running fast and will be surrounded by stars. Take a photo while Pikachu is running.

Near the beginning of the Beach course, there is a Pikachu near a surfboard. Lead it closer to the board using Apples and then take a photo of it while it is pretending to surf on the board.

The first time you see Meowth chasing the Pidgey out of the tall grass, throw Pester Balls into the grass. After Scyther comes out of the grass, keep throwing Pester Balls and two Pikachu will come out of the grass from the right side. They will sit on the two tree stumps. Take a photo of them on the stumps, and for even more points, play the Poke'Flute while they're on the stumps. 

In the Cave, towards the end, you will see a Zubat carrying a Pikachu. Hit the Zubat with Apples or Pester Balls until it drops Pikachu. Pikachu will fly away with balloons attached to it. 

Save Pikachu from the Zubat in the Cave and hatch Articuno from its egg. When you get to the end of the course where Jigglypuff's stage is, turn around and you'll see Pikachu riding on Articuno's back.

Pidgey:
Near the end of the Beach course, wait for the Pidgey to use Gust on the Meowth trying to steal their eggs. Capture them while they're using the attack.

Magmar:
In the Volcano stage soon after Moltres's egg, there will be two Magmar on the same platform. Throw an Apple between them and they will fight over it. Take a picture of them as they're fighting.

Jigglypuff:
In the Cave, there will be three Jigglypuff being chased by Koffing. Throw Pester Balls at the Koffing to make them go away, and near the end of the course the Jigglypuff will sing on the stage. The more Jigglypuff you managed to save, the more points you'll get for the photo. 

Graveler:
When you come to the waterfall in the Valley stage, play the Poke'Flute. Three Graveler will come down from the cliff face and start dancing. Take a photo of them doing this.

Mew:
Take a photo of Mew XD
